Deep pillows are ideally suited to side sleepers, especially those with broad shoulders. Your pillow should fill the gap between your ear and the mattress to avoid you needing to bend your neck. So if you have broad shoulders, you'll need a deeper pillow, or may prefer to stack 2 pillows on top of one another. Deep pillows are also a delight for snuggling into if you're reading in bed; so you may wish to invest in a deep pillow to make your bedtime reading that little bit more snuggly.
